Ingredients
For Marinade
4
cups
of buttermilk
1/4
cup
of Dijon mustard
3
tbsp
of Salt
4
tsp
of ground black pepper

tsp
of cayenne pepper
1 3/4
kg
of cut chicken pieces
For Frying
6
cups
of all-purpose flour
1
tbsp
of Baking powder
1
tbsp
of coarse salt
1
tsp
of ground black pepper
6
cups
of peanut or canola oil
Instructions
For marinade
Whisk the buttermilk, mustard, salt and pepper in a medium bowl
Pour this buttermilk mixture over the chicken
Cover and refrigerate for at least 6 hours
For Frying
Combine flour, baking powder, salt and pepper in a bowl.
Take the chicken pieces out of the marinade and coat each piece with the flour
Rest the chicken pieces in the flour, turning occasionally
Pour oil into a large pan and heat on medium high
Add 4 pieces of chicken to the pan and reduce the heat to medium low
Fry the chicken pieces until browned
Remove from heat and serve
