Ingredients

tomatoes
the happiest you can find (it is possible to find tomatoes on the vine)
sea salt and black pepper
extra virgin olive oil
a handful of chopped curly parsley

good anchovy filletsoil
separated but kept whole
2
heads of Little Gem lettuce
washed and separated, not shredded
a splash of Vinaigrette
Instructions
Slice the tomatoes in half lengthwise, sprinkle with salt and pepper and oil, and roast in a medium oven for approximately 20 minutes. This will soften and slightly dry them, intensifying and sweetening their flavor. Allow to cool.
Mix all the ingredients in a bowl and eat.
