Picklin’ Up Some Chicken
A spicy non veg pickle.

Chicken
washed and drained, cut into bite sized pieces

ginger garlic paste

turmeric

red chili powder

coriander seeds
1/2
tsp
Mustard seeds

tsp
Poppy seeds
1/2

cinnamon

Cloves

Cardamom

Aof cumin seeds

lemon
juiced
Oil – as required
salt as required
Instructions
Whisk the turmeric and ginger garlic paste together.
Coat the chicken pieces with this mixture and allow it to sit for ten minutes.
Fry the chicken pieces for two minutes in a pan of hot oil, with the lid on.
Then, take the lid off and sauté the chicken until cooked.
Allow the chicken to cool.
Meanwhile, separately dry roast the coriander seeds, mustard seeds, poppy seeds, cinnamon, cloves, cardamom and cumin seeds.
Allow the roasted spices to cool and grind them to a fine powder.
Place the lime juice in a small pan and heat it for a few seconds over a low flame.
Stir the spice powder into the chicken.
Then, stir in the red chilli powder and lemon juice.
Add salt as required.
Allow the chicken pickle to marinade in the spices for an hour and then put it in a sealed jar.
The pickle is ready!
