Apple Risotto Recipe

chicken broth

Italian white rice

apples
peeled and diced

dry white wine

Parmigiano-reggiano cheese
freshly grated
Instructions
Heat the chicken broth and reduce to simmer.
Melt the butter and sauté the onion for two minutes.
Add the rice and one cup of the apples and sauté.
Add the wine and bring to boil until the wine reduces.
Add the broth and stir until almost all of it is absorbed.
Add the remaining 1 cup of apples.
Cook until creamy and top with the cheese.
Serve.
