Preparing the ground coconut masala
  1. Grind the coconut, green chilies and cumin with little water to a coarse paste.
  2. Cook the vegetables and curry leaves in water in a covered pan with salt added to the water.
  3. When the vegetables are half cooked, add turmeric powder and mix the mixture well.
  4. After a minute, add the ground coconut paste. Mix well.
  5. Simmer the vegetables till they are fully cooked.
  6. Once they are fully cooked, add the beaten curd.
  7. Stir and simmer for a minute. Turn the stove off.
Preparing the Tempering
  1. In another pan, heat coconut oil.
  2. Crackle the mustard seeds and broken red chilies and pour the tempering into the avial.
  3. Cover with a lid for 5 minutes and then stir.
  4. Serve the avial with rice and sambar.
