Heat skillet or griddle to a medium-high heat and cook bacon until fat is rendered and bacon is crisp. Remove bacon, and place on a paper-towel-lined plate to let excess fat drain off.
Clean skillet or griddle, and spray with cooking spray.
Heat to medium-high heat, and place cooked bacon strips back on the cooking surface.
Pour pancake batter around the strip of bacon, about 1/2 cup per slice of bacon.
When little bubbles start to form at the edges of the batter, flip the pancakes and cook the other sides until golden brown.
