Ingredients

ginger garlic paste

garam masala
Instructions
Roast the eggplant. After it turns brown-black, remove the skin.
Mash the eggplant and keep it aside.
Heat oil in a pan. Add finely chopped onions and fry till transparent. Add ginger-garlic paste. Add chopped tomatoes. Stir till oil separates.
To this, add the red chillies, coriander powder, turmeric powder, garam masala and salt. Stir well, and add yoghurt.
Add the mashed eggplants and mix it well. Allow it simmer for 5 minutes.
Garnish with green chillies, green coriander and garam masala powder.
