Ingredients
600
grams
of tomato
2
cloves
of garlic
2
tbsp
of extra virgin olive oil
Salt and ground pepper

tsp
of chopped oregano or oregano powder

Large Eggs

of cheese
Instructions
Preheat the oven to 200 degrees C
In a bowl, add the tomatoes, garlic and oil and mix well
Season the marinated tomatoes with salt and pepper
Place the tomatoes cut side up and roast for 15 minutes in a pan
Remove from heat and add it to blender.
Puree it until it becomes semi solid mixture
Add the oregano to this mixture
Place oven-proof bowls on top of a baking sheet
Strain through the tomato puree into the bowls
Crack open the eggs and add them into the bowl with some salt and pepper
Add the cheese on top of the eggs
Bake for 15 minutes
Remove from the oven and serve hot
