Ingredients
8
cups
of milk
2
tbsp
of milk
6
tbsp
of curd
3 1/2
cups
of sugar

tsp
of sooji
Instructions
For the cheese balls
Boil the milk.
Turn off the heat and wait for 1 minute
Slowly add the curd until the solids separate
Using a cloth, gather the solids from the liquid mixture
Drop the cloth with the solids in cold water to stop the curdling
Store it until excess water releases from the cloth
Kneading the cheese balls
Remove the solids from the cloth and start kneading slowly using the palm of your hand
Shape them into small balls
For the sugar syrup
Add the sugar to 2 cups of water and let it heat up
Once it starts boiling, add 1 tbsp of milk to the sugar syrup.
Remove any excess particles from the syrup
Boil the syrup until you get a 2 string consistency
For cooking the cheese balls
Once the syrup comes to a boil, drop in the cheese balls
Cook the cheese balls in the sugar syrup for approximately 5 minutes on high flame and 15 minutes on low flame
Garnish it with some roasted pistachio and serve it hot or cold!
Recipe Notes
While cooking the cheese balls, make sure not to include too many in one batch.
