Legal Blue Sky
Delicious blue rock candy.
Ingredients
3 3/4
cups
sugar
1 1/4
cups
light corn syrup
1
cup
Water
Blue food colouring
1
tsp
flavouring (cherry
vanilla, lemon or apple)
A pat of butter for greasing
Instructions
Grease a baking sheet with the butter.
Combine the sugar, corn syrup and water together.
Place this mixture on the stove over medium heat.
Allow this mixture to come to boil.
After boiling for 3 minutes add the food colouring and flavours.
Place a candy thermometer in the mixture and allow the temperature to rise to 300F, stirring occasionally.
Once it reaches this temperature, take the candy off the heat.
Pour the candy onto the greased paper.
Allow the candy to cool (a couple of hours).
Break the candy into crystals with a hammer.
Your blue sky candy is ready!
