Instructions
  1. Heat the oil in a large pan.
  2. Fry the onions for 5 minutes until softened.
  3. Stir in the ground coriander and potato, then cook for a minute.
  4. Add the carrots and stock, bring to boil, then reduce the heat.
  5. Cover and cook for 20 minutess until the carrots are tender.
  6. Transfer to a food processor with the coriander and blend until smooth
  7. Return to pan and add salt if necessary.
  8. Reheat and serve.
