Ingredients

vegetable oil

onion
chopped

ground coriander

Potato
chopped

carrots
peeled and chopped

vegetable or chicken stock

coriander
salt to taste
Instructions
Heat the oil in a large pan.
Fry the onions for 5 minutes until softened.
Stir in the ground coriander and potato, then cook for a minute.
Add the carrots and stock, bring to boil, then reduce the heat.
Cover and cook for 20 minutess until the carrots are tender.
Transfer to a food processor with the coriander and blend until smooth
Return to pan and add salt if necessary.
Reheat and serve.
