Cauliflower Egg Fried Rice
Cauliflower fried rice, a wonderful meal option for ones on low carbohydrate or grain free diet. Apart from this, cauliflower is an excellent source of vitamin C. Addition of egg whites enhances its protein content as egg white is loaded with all essential amino acids required by the body. Carrots & peas add on to its nutrient content as they contain vitamins & minerals.

  1. Cut the cauliflower into small florets so that they’ll fit into a food processor.
  2. Add the cauliflower florets into the processor and process the cauliflower until it appears to be like” Rice”.
  3. Add 1 tsp. olive oil into a nonstick pan. Add Carrots, spring onion and peas to it.
  4. Add in the cauliflower and let it cook on medium heat. Stir occasionally
  5. Add the egg white to the pan and quickly scramble
  6. Add 1 tsp. soy sauce and salt to taste.
  7. Cook for 2-3 minutes more and you cauliflower fried rice is ready to serve!!!
