Jackfruit Curry
A hearty South Indian gravy made with jackfruits.
Ingredients

cups
of diced Jackfruit
cup
½of Cowpeas
tsp
¼of Turmeric Powder
1/2
tsp
of Chilly Powder
salt to taste
To grind
cup
¾of grated Coconut
1
tsp
of Cumin Seeds
For Tempering
1
tbsp
of Coconut oil
cup
½of grated coconut
tsp
½of mustard seeds
1
tsp
of Urad Dal
2
diced Red Chillies
Curry Leaves – few sprigs
Instructions
Before you begin, soak cowpeas for 15 minutes and pressure cook for 15 minutes.
In a pot, add the jackfruit, turmeric and chilly powder along with salt to taste.
Add a cup of water to the pot and cook for 8 minutes or until the jackfruit has been fully cooked.
Then add the drained cowpeas and cook for about 5 minutes.
While that’s cooking, add coconut and cumin seeds in a grinder and grind to a smooth paste with a tablespoon of water.
Add the paste to the cooked jackfruit and simmer for about 3 to 4 minutes.
Meanwhile, add coconut in a frying pan with oil and roast until browned.
Add the tempering ingredients which are mustard, dal, chillies and curry leaves.
After frying for a minute, add the tempering to the jackfruit gravy and mix well.
Remove from heat and serve.
