Ingredients

extra virgin olive oil

chopped cilantro

grated orange zest

boneless pork shoulder
Instructions
Whisk all the ingredients leaving out the seasoning and the pork.
Add 1 teaspoon of salt and pepper each.
Shift the marinade to a ziplock bag and put the pork in it as well.
Close the bag and move it around so that the pork in well-coated in the marinade.
Refrigerate it overnight.
Preheat the oven to 425° and put in a rack on a rimmed baking sheet.
Take out the pork on the kitchen platform and throw away the excess marinade.
Fold the pork inwards and tie it with a string to make a roll.
Season the pork with salt and pepper.
Put the pork on the rack and roast it for about half an hour.
Once the pork is light brown, reduce the oven temperature to 375° and keep on roasting for another one and a half hours.
Check the temperature in the center of the pork and once its 160° leave to rest for half an hour.
Remove the string and slice the pork before serving.
