green plaintain

rice vinegar
1/4
cup
garlic

red jalapenos

Oil
for deep frying
Salt
for seasoning
Instructions
Cut the plaintain into 1/4 inch slices and season them with salt.
Heat oil in a deep pan and fry the plaintains till crispy and golden.
Bring them out, smash them and fry again till you get a colour a little beyond golden and remove.
Add rice vinegar, garlic, red jalapenos and Thai chilies in a blender and blitz them to make the chile vinegar.
