Super Simple Salad
This delicious cold salad takes only a few minutes to put together and is incredibly refreshing.
Ingredients
For the salad

ounces
linguine
or preferred pasta

pound
small shrimps
cooked
1
cup
bean sprouts
1
red bell pepper
thinly sliced
2
green onions
sliced
1/4
cup
fresh mint
chopped
1/4
cup
Fresh coriander
chopped
For the sauce
1/4
cup
fish sauce
1/4
rice vinegar
1
tbsp
granulated sugar
2
garlic cloves
minced
1
tbsp
lime juice
1/4
tsp
Asian chili paste
Instructions
Cook the linguine for ten minutes in lightly salted boiling water. Drain the water.
Put the linguine in a serving bowl and add the shrimp, bean sprouts, red pepper, cucumber, onions, mint and coriander.
Toss to combine.
Whisk together the ingredients for the dressing.
Pour the dressing over the salad and toss well.
Serve after ten minutes.
