  1. Combine in the orange juice, honey, and zest in a saucepan.
  2. Bring to a gentle boil, and simmer for about 5 minutes.
  3. Stir in the cranberries and continue to cook until they burst and the mixture thickens (about 15 minutes).
  4. Spoon the cranberry sauce into a bowl and refrigerate for 6-8 hours before serving.
