DEEP-FRIED TRIPE
A celebration of the soothing powers of tripe, this time with a little crunch to it.
Instructions
  1. Season the flour with salt, pepper and cayenne for a little piquancy, but not enough to lose its soothing edge.
  2. Heat the oil up in whatever cooking arrangement you have. When hot, toss the tripe in the seasoned flour, shake off excess in a sieve and slip it into the oil. Deep-fry in batches until golden. Rescue from the oil and tip onto kitchen paper to remove excess oil.
  3. Serve immediately with pickled onion vinegar for dipping, and chips. Ahhh!
