Instructions
Begin with preheating the oven to 180°C.
Meanwhile add whole tomatoes, one portion of oil, salt and pepper in a bowl.
Toss them well and keep on a baking pan and roast for about half an hour.
Meanwhile keep a pan on medium flame, add the remaining oil and saute the onions along with the peppers and garlic.
Keep stirring till the onions become translucent.
Add the chicken stock, lime juice, cayenne pepper, chilli powder, cumin, paprika and bay leaf.
Let the mixture come to a boil and once it does. reduce the flame to low and let it simmer for about 20 minutes.
Add the roasted tomatoes to the broth along with the chicken strips and simmer for another ten minutes.
Take a hand blender and blend the soup till your reach a smooth consistency.
Adjust the salt and pepper seasoning and garnish with tortilla chips, sour cream, avocado and jalapenos right before serving.
Alternatively place the garnish on the table while serving.
