Instructions
In a blender, mix the garam masala powder, pounded red chilies, curd, salt and half of the chopped green chilies.
Wash the Bhindi and trim them. Take a knife and make slits in the bhindi.
This will help the vegetable to soak in the masala.
Now, marinate the bhindi in the curd mixture and set aside for approximately 20 minutes
Take a wok or a ‘kadai’ and heat the oil or ghee.
Once the oil is hot, add the rest of the chopped green chilies, ginger garlic paste and turmeric and fry well.
Now, add the bhindi and curd mixture and cook nicely for approximately 10 minutes.
After this, add ghee or butter and sprinkle garam masala powder on the bhindi. Cover the wok and cook for another 5 minutes on a low heat.
Now, remove the lid and toss, turn and cook well for 10 minutes till the mixture turns dry.
Remove from fire and serve hot, garnished with coriander leaves.
