Over the Rainbow
Yummy cookies that turn out crisp, colourful and crumbly every time.

  1. Sift the flour, salt and baking powder. Set aside.
  2. Cream the butter, shortening, sugar and Jell-O together.
  3. Add the eggs, on at a time, and vanilla. Beat on medium speed until well mixed.
  4. On slow speed, add the dry mixture, adding a little at a time- mixing well.
  5. The dough will be fairly soft, but not sticky.
  6. Pre-heat oven to 400°.
  7. Roll dough into 1″ to 1 1/4″ balls and then roll in a bowl with about 1/2 cup of granulated sugar in it, completely covering the exterior of the dough ball. Place on the pan about 2″ apart. Use a flat-bottomed glass (or bowl) and press the dough to about a 3/8″ thickness.
  8. Sprinkle the top with colored, chunky sugar. Press down slightly.
  9. Bake the cookies for 6 – 8 minutes.
  10. Cool on a rack. Serve.
