In a food processor, pulse bread until coarse. Add the cheese, salt and pepper and pulse again.
Place the chicken in an oven proof tray and season with salt and pepper. Coat the chicken breasts with the crumbs mixture. Cover with foil and bake for 15-20 minutes in a pre-heated (400 degrees) oven.
Remove the foil and bake for another 2-3 minutes till the crust is golden.
