Method
  1. Cook pasta according to packet directions, drain and set aside.
  2. In a bowl, combine soy sauce, brown sugar, ginger and sriracha sauce, mix well and set aside.
  3. In a large pot, heat olive oil. Add the beaten eggs and red pepper flakes and combine together. Stir till the eggs are scrambled. Set aside.
  4. In the same pot, add some olive oil and sauté the vegetables till cooked-crisp.
  5. Lower the heat, add the pasta and eggs and stir them all together. Be careful so as to not break the pasta.
  6. Pour the mixture over the pasta and mix adding the peanuts, cilantro and green onions.
  7. Serve hot in bowls.
