Ingredients
Portion sized whole grain spaghetti
1
medium red onion sliced
2
cloves
chopped garlic
2
tablespoons
olive oil
1
bunch kale
stemmed and roughly chopped or torn
8-10
cherry tomatoes
halved
Handful of roasted almonds or pine nuts
2
tablespoons
olive oil
cup
¼grated pecorino
Salt & Pepper to Taste
Instructions
Cook pasta according to the directions on the packet and keep aside.
Heat oil in a skillet and add the sliced onions, chopped garlic, salt and pepper. Cook until he onions are slightly browned.
Add the chopped kale and cook until tender. Add the halved tomatoes to the skillet and cook until soft.
Add the roasted nuts and pecorino to the mixture adding the spaghetti to the skillet. Mix well combining everything together.
Plate the spaghetti adding extra pecorino on top. Serve hot.
