Peep into any south indian larder, and you are likely to find a good stock of ‘podis’ or dry spice-dal blends that can be served as side dishes or even mixed with rice and served, for a simple main course meal. Here is a healthy powder made with sesame seeds that can be mixed with rice and til oil and served with papads, for a quick and tasty treat.
Heat the oil in a small kadhai, add the sesame seeds, dry coconut, red chillies and asafoetida, mix well and sauté on a slow flame for 5 to 7 minutes, while stirring continuously. Keep aside.
When cool, blend in a mixer to a coarse powder.
Store in an air-tight container and use as required.
