Ingredients

softened butter

brown sugar

molasses

Instructions
Take a large bowl and mix together flour, ginger, cinnamon, baking soda, nutmeg and salt.
In another big bowl, beat the butter and brown sugar with a hand blender till the mixture is light and fluffy.
To this, add molasses, egg and vanilla.
Mix this in as well and then little by little beat in the flour mixture.
Take the dough and turn it into a flat disk and wrap this in a cling film.
Keep the dough the refrigerator for a minimum 4 hours.
Preheat the oven to 350°F and meanwhile sprinkle some flour on the work surface and roll out the dough.
The thickness should be of 1/4 inch.
Cut out the cookies into gingerbread man shapes using a palette knife or a cookie cutter.
Place the cookies on a baking sheets and bake them for about 8 to 10 minutes.
Let them be on the sheet for another two minutes for cooling and then cool them completely on wire racks.
Decorate with the icing of your choice or have them the way it is.
