Burri-to in a Hurry
Take your breakfast plans to Mexico with this power packed Burrito.
Ingredients
Oil- 10 ml
Small onion – 1 no
sliced
Red / yellow bell pepper – 1
Black beans / baked beans- 1/2 cup
Scrambled Eggs- 3
Grated cheese – Hand full
Sour cream – 3 tbsp
Salsa -1/4 cup
Avocado- medium – 1
Salt & Pepper to Taste
Tortilla -3
Instructions
Heat the oil in a pan. Sauté onion and peppers until softened, add beans and cook for 4 mins and season with salt and pepper.
Transfer the contents into a bowl.
Warm the tortilla in a pan.
Spread each tortilla with 1 tbsp of salsa and sour cream, and other layer 1/4 cup beans mixture,1/3 scrambled egg and cheese, diced avocado , season with salt & pepper.
Roll the Burrito and enjoy.
