  1. To begin making the duck you should first preheat the smoker.
  2. Juice out half of the orange in a bowl and mix in honey, wine vinegar, sherry, soy sauce and pepper.
  3. Boil this mixture and then leave it aside to cool.
  4. To prep the duck first pierce the skin at several places using a sharp fork.
  5. Then pour a gallon of boiling hot water over the duck.
  6. Stuff the duck the onion and second half of the orange and keep it aside to dry.
  7. Put the dry duck in the smoker for 3 hours.
  8. Keep checking the internal temperature of the duck till it reaches 160°F.
  9. You also need to keep glazing the duck with the sauce every half an hour.
  10. Once the duck is at the required temperature let it rest for a few minutes before serving.
