A Wonderful Mess of Spaghetti

spaghetti

fresh basil

Parmigiano-reggiano cheese

Instructions
Finely chop the tomatoes.
Heat two tablespoons of the oil over medium heat and sauté the garlic for half a minute.
Stir in the tomatoes, half a teaspoon of salt and pepper.
Cook over medium high for 15 minutes, adding a little water and mashing the tomatoes with a spoon until a pulp forms.
Boil the water and remaining salt.
Once it boils, turn down to simmer and add the pasta.
Cook and return the water to a boil.
Cook for 8 minutes and then drain the pasta, reserving half a cup of water.
Mix the pasta and water with the tomato paste and cook in a pan over a medium flame, tossing constantly.
Place the spaghetti in a serving dish and sprinkle with the cheese.
