Ingredients

vegetable shortening

barbecued pork
leave some aside for garnish

Instructions
Mix soy, rice vinegar, sesame oil and sugar together till well combined.
In a skillet, add the shortening and allow it to melt.
Now stir fry the pork in it for about a minute.
Add in the vegetables and fry.
Once the vegetables are tender, mix in the eggs till they are scrambled.
Lastly, add the rice, scallions, the soy mix along with pepper.
Mix and continue to stir fry.
Once done, remove from heat and season with salt.
Mix well and served pickled ginger and sliced pork on top.
