Garlic Crusted Roast Lamb Recipe
Lamb roasted in a delicious garlic and herb crust.
Ingredients
12 – 15
garlic cloves
peeled
1/4
cup
rosemary leaves
1/4
cup
extra virgin olive oil
2
racks of lamb
Salt and freshly ground pepper
Instructions
Pulse the garlic, rosemary and olive oil in a food processor.
Toss the lamb racks with salt and pepper and rub the pulsed mixture over them.
Allow the racks to rest for an hour.
Preheat and oven to 450 degrees and roast the lamb for 15 minutes.
Turn the racks and roast for 10 more minutes.
Take out off the oven and allow the ribs to rest for 10 minutes.
Carve, serve and enjoy.
