Blueberry Pancakes Recipe

  1. Mix the flour, sugar, baking powder, baking soda and salt together.
  2. Whisk the eggs in a separate bowl and mix the milk, sour cream, butter and vanilla to the eggs.
  3. Whisk the egg mixture into the dry mixture.
  4. Stir in the blueberries and lemon zest.
  5. Heat a little butter in a skillet.
  6. Pour a quarter of the batter in the skillet and cook.
  7. Once the outer edge sets, flip the pancake over.
  8. Fry on the other side for 30-45 seconds.
  9. Take out of the pan.
  10. Stack onto a plate and top with blueberries.
