Mix together one cup molasses and water and keep aside.
In a large bowl, whip softened butter and sugar until light and fluffy. Beat in the egg white and vanilla extract.
In a separate bowl, mix together all purpose flour, all the spices and salt. Add the gry ingredients to the wet ingredients and add in the molasses and mix througly.
Fold in the pecans into the mixture.
Pour in the mixture into a greased slow cooker and sprinkle brown sugar on top. Mix melted butter and hot water and pour over the batter in the cooker.
Cover and cook on high. Test with a toothpick and if it comes out clean, your cake is done!
Let it stand for a good 15-20 minutes in the cooker before serving. Serve with a side of whipped cream and a sprig of mint for that authentic touch!
