Ingredients
500
grams
tomatoes

yellow bell pepper
1
yellow squash
2
Shallots
1
cup
of carrot juice
2
tbsp
of sherry wine vinegar
3/4
tsp
Salt

cup
of fresh mint leaves
1/2
cup
of sour cream
Instructions
Add the tomatoes, bell pepper, squash, shallots, carrot juice, vinegar and salt to blender
Puree the mixture until it forms a smooth consistency
Refrigerate the mixture until chilled
Boil water in a small sauce pan and add the mint leaves and cook for 10 seconds
Remove the mint leaves from the water and rinse under cold water
Finely chop the mint leaves and add to sour cream. Mix well
In a chilled bowl, add the soup and top it off with the minted sour cream
Serve cold
