  1. Combine the biscuit crumbs, sugar and butter.
  2. Place the mixture in a cake tin lined with baking parchment.
  3. Chill a freezer until set.
  4. Whisk together the cream cheese, icing sugar and vanilla.
  5. Whip the double cream.
  6. Stir the double cream into the cream cheese.
  7. Pour the mixture onto the biscuit base and smooth with a flat spoon.
  8. Chill for an hour until set.
  9. Serve and enjoy.
