Granny Smith Apples and Avacado Salad with Cilantro Oil

Granny Smith apples
cored and cut into 1/2-inch pieces

Ripe Hass avacados
peeled, pitted and cut into 1/2-inch chunks
2
strawberries
thinly sliced
salt to taste
Freshly ground black pepper
Juice of 1 lemon
teaspoon
cayenne pepper

tablespoons
extra virgin olive oil
2
tablespoons
finely chopped fresh cilantro
1
medium firm English cucumber
Sprigs of dill
Instructions
Mix apples, avacados, strawberries, salt, lemon juice, black pepper and keep it in a cool place.
Whisk together oil and cilantro until well combined.
Cut the cucumber vertically into thin slices, about 1/4-inch. Combine the 2 ends and form into a cylinder by securing it with a toothpick.
Please it on a plate and fill it up with 1/4 of the mixed salad.
Drizzle with the cilantro oil on sides and garnish it with a sprig of dill.
