From Greece with Pasta
Crunchy pasta that just loves picnics.
Ingredients

oz. rotini or your favourite pasta
cooked and chilled

inch
medium tomatoes
cored, seeded and cut into ½dice

inch
small cucumber
cut into ½dice
1
small Onion
finely chopped
a few olives chopped
1/2
capsicum chopped fine
1
cup
feta cheese
crumbled
3
tbsp. chopped fresh oregano
3
tbsp. chopped fresh parsley
3
tbsp. red wine vinegar
cup
¼olive oil
Salt and freshly cracked black pepper
to taste
Instructions
Toss all ingredients in a large bowl, season with salt and pepper and serve chilled.
