Shimmering Roast Chicken
Juicy, tender roast chicken.
Ingredients

large chicken

tbsp
butter
softened
A little butter for basting

garlic cloves

fresh ground black pepper

tsp
turmeric
1/2
tsp
ground cumin
1
tsp
dried thyme
1
tbsp
fresh cilantro
minced
4
tbsp
thick coconut milk
4
tbsp
dry sherry
1
tsp
tomato purée
Salt
chilli powder
Instructions
Remove the giblets and rinse out the cavity of the chicken.
Pat dry.
Mix all the remaining ingredients (salt and chili powder to taste) together until a thick paste is formed.
Rub this mixture under the skin of the chicken well.
Marinate the chicken overnight.
Preheat an oven to 375 F.
Place the chicken in a roasting pan, and roast for an hour.
Turn over and roast for 30 more minutes.
Rub with a little butter and roast for 15 more minutes until the juices run clear and the chicken is golden brown.
