Ingredients
For The Pizza

thinly sliced mushrooms

green capsicum cut into rings

dry red wine

For the dough

warm water

active dry yeast

all purpose flour

semolina flour
1/2
cup
vegetable oil

Instructions
Mix together the yeast, water and sugar till well combined and keep it aside for 5 minutes.
Once the mixture is foamy, add one and half cup of the flour, semolina, half cup of oil and salt.
Mix using your hands and by adding the flour little by little, make a dough.
Once the dough is ready, knead it until smooth.
Grease a large bowl with oil and coat the dough with it.
Leave the dough in the bowl and cover the bowl with a plastic film for about an hour and a half.
Meanwhile, heat oil in a pan and add the garlic.
After half a minute, add the herbs, seeds, salt, peppers and cook for another minute.
Now add tomatoes, wine and sugar.
Give it all a mix and bring to a boil.
Simmer at a low flame for about half an hour and then cool down before using.
Once the sauce has cooled down and the dough has risen, preheat the oven to 475F.
Grease the deep dish pizza pan with extra virgin olive oil.
Divide the dough into two equal and press one into the pan, stretching it to the edges and leave it for 5 minutes.
Layer the pizza dough first with mozzarella then with pepperoni, mushrooms, bell peppers, onions, olives and sausage.
Now spread a ladleful of sauce over the toppings covering it well.
Cover the whole thing completely with parmesan and bake for about half an hour or till the cheese bubbles.
