Place flour, salt, and sugar in the food processor and pulse a few times to combine.
Dice the butter and coconut oil and add.
Pulse until the mixture resembles bread crumbs.
With the machine running, pour two tablespoons of the ice water down the feed tube and pulse until dough begins to form( add more if needed- you may not use all 4 tablespoons).
Empty dough out onto a floured surface, roll ball, gently flatten into a disc and wrap in plastic wrap.
Refrigerate for half an hour.
When ready to use dough, roll it out on a floured surface, prick all over with fork, and bake at 400 degrees- until golden brown.

You may think twice about the coconut oil crust. But trust me, there isn’t anything to it. And no, it won’t taste weird. It’s flaky and light as a ‘pie’.
