Lamb Delight!
Ingredients

oilive oil

Shallots
finely sliced

medium yam
cubed

Lamb
diced

flour
Salt
black pepper and paprika to taste

cocoa

prunes
sliced

cup
red wine
1 1/2
cup
beef broth
1/4
cup
Almonds
slivered

tbs
red wine vinegar
Wild rice
cooked
Instructions
Sauté the shallots in the oil until they soften.
Stir in the yam and a few tablespoons of water and cook until soft.
Remove the yam and onions from the pan and in the same pan saute the lamb, flour and spices in a little oil.
Allow the lamb to brown and mix it with the yam and shallots.
Add the remaining ingredients to this mixture and bring it to boil.
Once it boils, turn the stew down to simmer and allow it to simmer for an hour.
Serve the stew with the wild rice.
