Purée avocado in a mixing bowl with an immersion blender or purée in a standard blender. Add the agave syrup and continue to blend until mixture is creamy, and there are no chunks.
Plum-infused Mezcal
Add sliced prunes to the bottle of mezcal and let sit for one week. Strain out solids, and store infused mezcal until ready to use.
I Dream of Greenie Cocktail
Rim half of a lowball glass with smoked salt. Combine all ingredients in a shaker with ice and give it a good long shake. Double strain into the lowball glass over a single large ice cube.
