Terrific Tikka!
A traditional recipe for mouthwatering chicken tikka!

  1. Cut the chicken into pieces and trim all the fat.
  2. Wash the chicken and dry completely.
  3. Mix all the other ingredients together well.
  4. Put the chicken in this mixture, ensuring that it is completely coated.
  5. Allow the chicken to marinade in this mixture overnight (place it in a fridge).
  6. Barbecue the chicken over an outdoor fire for 20 – 30 minutes.
  7. Brush the pieces occasionally with ghee and turn them over so they roast evenly.
  8. Once the chicken skin begins to blacken, take it off the barbecue and serve with lemon wedges and chutney!
