Kaiserschmarrn (Emperors’ Nonsense)
Kaiserschmarrn also known as the Emperors’ Nonsense is a traditional Austrian dessert. It is a type of pancake made in butter. The pancake is split into several pieces while frying and sprinkled with icing sugar.

Ingredients

eggs

tbsp. butter
200
gm flour
50
gm sugar

Milk
10-12

raisins
soakedwarm water & a splash of rum
pinch
Aof salt
For garnish
icing sugar
Plum or Apricot jam
Instructions
Separate the egg white and the yolks.
In a clean bowl, whip the egg yolk, milk, sugar, and the flour together
Beat the egg white with a pinch of salt till stiff and peaks are formed
Gently fold this in the flour mixture.
Heat a non-stick pan and add a dab of butter and a wee bit of rum.
Add the batter and swirl the pan, so that the mixture spreads and is about 1/2 inch thick
Let it cook for a minute or two on medium flame. Add raisins
With a spatula break the pancake into pieces, gently cook and let it cook for another minute or two till slightly brown
Plate it, sprinkle with icing sugar, and serve with the apricot or plum jam.
Tip: This tastes fabulous even with melted chocolate or just chopped fresh fruits
