Chicken Ishtu
A coconut broth based spiced chicken curry.

Chicken
cut into pieces

Potato
cut into cubes

green chillies
halved
A handful of curry leaves

Cloves

Ginger
chopped

garlic pods

garam masala

tsp
peppercorns

cup
Thin coconut milk
1
cup
thick coconut milk
pinch
Aof pepper

cooking oil
salt as required
Instructions
Heat the oil and sauté the green chillies, cloves, ginger and curry leaves for half a minute.
Add the onions and sauté until they become translucent.
Add the garam masala and allow it to roast for 30 seconds.
Mix it in with the onions and add the pepper corns.
Stir in the chicken.
Stir in the potato.
Sauté for a minute.
Stir in the thin coconut milk and allow the chicken to cook for a minute.
Pour this mixture into a pressure cooker and cook for two whistles.
Once the steam escapes from the pressure cooker open it and stir in the thick coconut milk.
Stir in a little pepper and salt as required.
The stew is ready!
