I Zest You!
Add some zest to your summer days with this cool key lime ice cream.
Ingredients

  1. Whisk the cornstarch, sugar and salt in a saucepan using a handheld whisk.
  2. Pour in the milk gradually and whisk it in.
  3. Pour in the half and half gradually and whisk it in.
  4. Cook over a medium flame for 8 – 10 minutes until the mixture thickens. Stir constantly.
  5. Whisk the egg yolk and pour in the hot cream gradually while whisking.
  6. Pour this mixture into the sugar, salt, cornstarch, milk and half and half mixture and whisk.
  7. Strain the mixture and discard and solids.
  8. Refrigerate the mixture for 8 – 24 hours.
  9. Remove the mixture from the fridge and freeze it in an ice cream maker according to the manufacturer’s instructions.
  10. Half way through the freezing process stir in the key lime zest, key lime juice and graham crackers.
  11. After freezing is complete allow the ice cream to stand at room temperature for five minutes.
  12. Serve!
