Chicken for your Ki
Tender, juicy roast chicken with herbs.

Salt and freshly ground pepper

cut into 8

lemon
cut into 8 slices

chicken stock
Instructions
Preheat an oven to 425 degrees.
Soften the butter and combine it with the herbs, minced garlic, and lemon zest and salt and pepper.
Rub half the butter mixture over the chicken skin and half under it.
Place the whole chicken, breast side up in a roasting pan.
Sprinkle the whole herbs, lemon, onions, garlic cloves and the stock over the chicken and roast for half an hour.
Turn the chicken over with tongs and roast for 20 more minutes.
Pour in another 1/2 cup of stock and turn the chicken again.
Roast for 20 more minutes.
Transfer the chicken to a serving dish.
Pour any of the stock into a pan and cook over medium heat for a few minutes, stirring.
Strain this juice and serve as a jus with the chicken.
