Kung Fu Kickin’ Soup
A nourishing noodle soup inspired by Kung Fu Panda.
Ingredients

chicken/vegetable stock

cup
cabbage
shredded
1
cup
carrots
grated
2
chicken breasts
cooked and shredded (substitute with tofu if vegetarian)
1
cup
mushrooms
roughly chopped (button or Shiitake)

tbsp
soy sauce
2
tbsp
fish sauce
1/2
tsp
ground ginger
12
ounces
Udon noodles
4
green onions
chopped
Instructions
Boil the broth with a little salt to taste.
Stir in the cabbage, mushrooms, carrots, onions and chicken or tofu.
Allow the mixture to boil for two minutes and then lower it to a simmer.
Stir in the noodles and cook for 5-8 minutes until tender.
Stir in the soy sauce and fish sauce.
Allow the soup to simmer for five minutes.
Add pepper to taste.
Take off the stove and serve.
