Lemon Rice Recipe

Ingredients
Cooked rice – 2 & 1/2 cups
Lemon – 2
Turmeric – 1/4 tsp
Salt + as needed
To temper
Sesame oil – 2 tblsp
Mustard – 1 tsp
Urad Dal – 1 tsp
Channa Dal – 1 tbsp
Peanuts – 2-3 tblsp
Red chilli – 3
Green chilli – 4
Asafoetida – 1/8 tsp

Instructions
Cook rice using the regular method. Once done, add a little oil and salt, mix and set aside.
Heat a pan with oil and add mustard. Once spluttered, add urad dal, channa dal, peanuts and red chillies and fry until golden brown.
Add green chillies, curry leaves, asafoetida and turmeric and stir well. Add lemon juice and salt, mixing well, and remove from heat.
Add to the cooled rice and stir well, adjusting salt and sesame oil if required.
Recipe Notes
Tip: For a bright yellow colour for the rice, add more turmeric powder.
