Ingredients

1-inch chunks chicken breast
salt to taste
pepper to taste

minced shallots
3
cloves
minced garlic
3

red curry paste

tbsp
grated ginger

coconut milk

bunch
cut up broccolini
2
sliced green onions

chopped cilantro

tbsp
lime juice
Instructions
Sprinkle salt and pepper on chicken chunks.
Heat oil in a large pan and add the chicken.
Add the shallots and garlic as well and cook till the chicken is golden in colour.
Add red curry paste and ginger.
Stir and cook for a minute.
Now add coconut milk, give it a stir and bring to a boil.
Reduce the flame to low and let the gravy simmer stirring occasionally.
After about 10 minutes of cooking add broccolini and cook till the vegetable is tender.
Turn off the heat and add green onions, cilantro, salt, pepper and lime juice.
Stir and serve hot.
